For experienced bakers  only or those who have completed Introduction to Sourdough workshop.

  • Advanced techniques for managing your sourdough starter to achieve specific fermentation goals and desired outcomes.

  • Strategies for successfully working with higher hydration doughs, unlocking a more open and airy crumb.

  • Incorporating various inclusions (such as seeds or grains) while maintaining dough integrity.

  • Refined shaping and scoring methods to enhance both the aesthetic and structural qualities of your finished breads.

  • In-depth troubleshooting for common sourdough challenges, ensuring reliable and exceptional results.

 

Skill level: Advanced only* - bakers who have passed through introduction to sourdough and can consistently bake a good sourdough and are now looking to make it even better.

Duration: 5 hours

Days: typically Saturdays (see calendar for exact dates)

Materials needed: Apron, container to take home your dough/bread, notepad and pen.
